The lazy gourmande has once again been hibernating for a while (and so has her kitchen diaries). But winter is over and it’s getting hungry again.
I hope you guys haven’t lost faith in seeing me again around the kitchen? I’ll try to make it up to you. To start with, something green, fresh, velvety and fragrant. Something like spring to cheer up your aperitif or a dish of fresh pasta with friends.
Peasto
Peastou
serves 4 to 8 pers.
prep: 5 min. cook: 8 min.
Ingredients:
150 g peas (I used frozen peas);
1 Tsp olive oil;
1/2 Tsp lemon juice;
2 Tsp ricotta;
1 Tsp freshly grated parmegianno;
1 small clove of garlic peeled and crushed;
1 small handful fresh basil, roughly choped;
sea salt, freshly ground pepper and chili pepper to taste.
Cook the peas in boiling water for about 8 minutes or until just tender. Drain and set aside to cool.
Pour the peas and the other ingredients in the bowl of a food processor/blender and mix until smooth. Season to taste and refrigerate until further use.
This “peasto” will make an original and colorful dip or a great sauce for fresh pasta (for 4).
Bon appétit!
